As far as I know, the only type of lakes you will find in the mountains are going to be fresh water lakes. Here are some great recipes for you for trout, catfish and bass. Enjoy!

Trout Recipes

Garlic Lemon Butter Trout

Ingredients:

  • 4 trout fillets
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the trout fillets, skin side down, and cook for about 4 minutes.
  3. Flip the fillets and add minced garlic, lemon juice, and butter.
  4. Cook for another 3-4 minutes, or until the fish is cooked through.
  5. Season with salt and pepper, and garnish with fresh parsley before serving.

Bass Recipes

Pan-Seared Bass with Herb Butter

Ingredients:

  • 4 bass fillets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the bass fillets with salt and pepper.
  3. Add the fillets to the skillet and cook for about 4-5 minutes on each side, until golden brown.
  4. In a small bowl, mix butter with thyme, rosemary, and parsley.
  5. Once the fish is cooked, top each fillet with a dollop of herb butter and let it melt before serving.

Catfish Recipes

Southern Fried Catfish

Ingredients:

  • 4 catfish fillets
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

  1. Soak the catfish fillets in buttermilk for at least 30 minutes.
  2. In a shallow dish, mix cornmeal, flour, paprika, garlic powder, salt, and pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Dredge the catfish fillets in the cornmeal mixture, coating them evenly.
  5. Fry the fillets for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Drain on paper towels before serving.

Baked Catfish with Herbs

Ingredients:

  • 4 catfish fillets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the catfish fillets on a baking sheet lined with parchment paper.
  3. In a small bowl, mix olive oil, lemon juice, thyme, oregano, salt, and pepper.
  4. Brush the mixture over the catfish fillets.
  5. Bake for 20-25 minutes, or until the fish is cooked through.
  6. Garnish with fresh parsley before serving.
